A Joubert family favourite recipe passed down the generations from Mr Francois Joubert Senior who was fondly known by friends and family as Groot Leeu which means big lion.
Those who knew Groot Leeu will remember that he very much liked to serve this peri-peri chicken for friends on a late Sunday afternoon. Unlike traditional recipes, there are no specific quantities attached to this recipe as everything can be added according to your own taste. It’s pretty simple so you can’t go wrong. We hope you love it as much as we do!
Boil chicken portions in salt water for approximately 20 minutes.
Drain the chicken portions and marinate in the fridge overnight with the following:
Braai the chicken portions until the skin is crispy. Serve with potato salad and green salad.
